Tracking your other costs (fees, postage, etc) - how do you do it?

I'm always looking at ways to improve my spreadsheet for tracking my purchases and sales. As part of that, I incorporate my sales costs into my individual inventory - so postage, eBay/Bricklink fees, PayPal fees - all of those get associated with each individual item in my inventory. As I'm looking to do "version 3" of my spreadsheet, I starting thinking whether I should include the fees and associated costs with each individual item, or take that information an put it in a separate expense sheet. Fees change throughout time - discounts get offered (or removed), etc. Maybe putting them elsewhere is insignificant - the costs over time might only be off by a couple of dollars. Or maybe not. I'm not sure. So...thoughts? How do you track your sales costs?
